Mix all the ingredients for 2 minutes at slow speed and 2 minutes on medium speed with a flat beater. Add SMOOBEES and mix 1 minute on slow speed. Pipe 100gr of the batter in a muffin cup. Bake for approximately 35 minutes at 170°C.
Heat the egg white with the sugar au bain marie add 50°C. Whip it till you recieve a smooth fluffy texture. Pipe a dot of the meringue on the muffin and burn with a burner.
